Delicious creamy pumpkin pasta without any cheese AND with added fiber? Believe it!
I don’t know about you, but this time of year I get really fired up about all of the pumpkin products. And then eventually I get burned out on all the pumpkin-y sweets. This creamy mac and “cheese” is a great savory pumpkin option. An full can of fiber-full pumpkin goes into the sauce. The smoked paprika adds some serious depth to this dish. You won’t even believe you made this dish without heavy cream or cheese!
I’ve had my eye on a few pumpkin Alfredo recipes, most of which use heavy whipping cream and a half can of puréed pumpkin. For this recipe, I aimed to create a lighter, spicier recipe adapted from Pinch of Yum’s 5 Ingredient Pumpkin Alfredo.
