This is the perfect recipe to prep ahead of a busy week! These cute egg “muffins” take only 30 minutes to prepare and will provide you a healthy, on-the-go breakfast all week! Just reheat them in the microwave and you’re on your way.
You can use any veggies that you like for this recipe. It’s a great way to use up leftover cooked vegetables too. Sometimes I make this without the ground turkey and just go all in on the vegetables. It’s really up to you!
When the egg cups first come out of the oven, they will have risen similar to a souffle (see below). They will deflate as they cool.
I did not include specific measurements here for amount of veggies and turkey, since it’s really dependent on the ratio that you like and what you’ve got on hand. Just be sure to fill the muffin cups no more than 2/3 full with your vegetables and meat before adding the eggs!
