If you’re anything like me, you probably need a substitute for potatoes and sweet potatoes on Whole30. Don’t get me wrong – they’re definitely approved. I just found myself clinging to sweet potatoes like a life support, and I knew if I wanted to lose any serious weight, I needed more veggie and less potato in my life. Enter cauliflower.
Firstly, where has cauliflower been all of our lives? It seems like every day there’s a new cauliflower substitution. Cauli for potatoes, cauli for bread, cauli for pizza, cauli for risotto. It’s like a miracle vegetable. Can I get an Amen?
Cauliflower may be trendy, but I’ve never been one to turn down a health trend. My roomie and I are eating cauliflower at every turn. Although I love a basic mashed cauliflower with salt and pepper, I wanted to up the ante a bit with this recipe. Is it possible, I wondered, to make a “cheesy” mashed cauliflower without any dairy? The answer, of course, is YES.
The cheesy flavor for this mash comes from nutritional yeast. Nutritional yeast has long been a pantry staple for vegans and vegetarians, and you can find it in the bulk section at Whole foods or your local natural grocer. If you’re more of an instant shopper, you can find it right here.
I recommend buying your cauliflower already riced. It’ll speed up the recipe process a good bit, but if you’re looking to save money, you can use a whole head of cauliflower instead. The recipe below indicates using an immersion blender so you can just blend right in the saucepan, but if you don’t own one, you can transfer the ingredients to a traditional blender instead.
