This Craisin Nut Bark is such a simple and sweet holiday tradition in the Manocheo household. Every year my mom makes this candy to give to her friends for the holidays. I always look forward to her candy with joyful excitement, not only because I love it and can eat myself sick on it, but also because it represents Christmas and the traditions of giving to those we love and appreciate.
The sweetness of the white chocolate, mixed with the tangy craisins and the crunchy salty pistachios, make this candy so special. When I finally asked my mom why we make this for Christmas, she pointed out the colors! It is red, green, and white—how festive! I laughed because I had never noticed, but it really is as beautiful as it is delicious.
As much as I looked forward to eating this candy, growing up I also dreaded it because I was the designated pistachio sheller. I sat at the kitchen table and popped open all the pistachios needed for the recipe. My fingertips were typically covered in salt and almost raw… now that I make it myself, I take the easy route and just buy the pistachios already shelled. I’m not sure if they used to not be made pre-shelled, or mom was trying to make me work for my food. Either way, they now make them pre-shelled and this recipe is a cinch.
Seriously you just melt the white chocolate and add the craisins and pistachios, let is rest and enjoy! it’s a great gift or something to have out when guests arrive! I hope you enjoy this recipe as much as the Manocheos have!
