A gorgeous, healthful martini made with fresh beet, apple, and ginger juice. Make this at home with a blender and a strainer! No fancy juicer required.
Most beautiful martini award goes to this beet, ginger, and apple martini! Not only is this martini gorgeous, I actually felt great drinking it. It tasted similar to a beet juice you might snag at your local juice bar with some vodka tossed in. Get in some of the good stuff while drinking a boozy cocktail!
The type of apple you choose for the martini depends on what you’re after. If you’d like a bit of tartness, add a granny smith apple. If you’d rather have a bit more sweetness, opt for a gala or honey crisp. I used a honey crisp and loved it!
My only caution with this drink is to wear an apron while making it. Beet splatter from the blender or shaker will be tough to remove from your clothes, so be careful!
I chose to garnish with a few fresh mint leaves and a bit of sliced clementine I had on hand, but you can use a sliced lemon or lime, or an orange twist. Whatever you have on hand will be lovely!

Ingredients
- 1 roasted beet
- 3/4 apple, cored and quartered
- 1 inch piece of ginger, peeled and cut into quarters
- 10 fresh mint leaves
- 1/2 c water
- 3 oz simple syrup
- 6 oz vodka
- 1 oz fresh lime juice
- Blend beet, apple, ginger, mint, and water together in a blender until puréed. Stop and scrape down sides of the blender as necessary.
- Strain the purée through a mesh sieve to remove the pulp, and reserve the pulp for another use. (I like to use the pulp in smoothies or mix into yogurt.)
- Combine the beet juice, simple syrup, and vodka in a cocktail shaker with ice. Shake well until the mixture is cold and strain into martini glasses. Add garnish of your choice.
